This one-day course taught by Erika Koss will introduce core sustainability principles to coffee professionals: no previous experience in sustainability is required. Students will become familiar with sustainability terminology, learn about the power dynamics of coffee’s history, and discuss several global challenges along with solutions. The class will consist of both lectures and discussion, including required pre-class homework via email and an end-of-course online written examination. Participation in this class prepares students for the intermediate level and successful performance both in class and in the exam will result in a Foundation level certification with the Specialty Coffee Association.
